As I was preparing our dinner tonight I had a bit of an identity issue. This does not usually happen when cooking. Cooking is just something I do because it is healthier and cheaper for my family to eat at home, so I cook. But, this dinner project started on Sunday. Yep, Sunday.
I am dieting - with a moderate 5 pound loss of success I might add. But I'm trying to find recipes that are filling, healthy and that the guys will eat. So I thought about doing some stuffed peppers. But, I needed them to be diet. So, here is the identity crisis - I made up my own recipe. Since when am I that kind of a cook?
Actually, probably for a lot longer than I've been acknowledging, it's just that this time I thought about it as I do it.
Here is the result of my creative cooking:
They haven't baked yet, but they are ready to go. Hopefully they will taste as good as they look. And, for those of you who do weight watchers, they are only 6 points each. They have brown rice, chicken, almonds, and cream of chicken soup. I meant to put in onions, but just now realized I forgot to do that. So, they may be a bit bland. Boo! I guess I could unpack them and add the onions and repack them!????? We'll see how motivated I am to do that between now and when I start to cook them in one hour.
Anyway, I guess I'm a bit of a make-up-my-own-recipe kind of gal. Who knew!

My Dh and I love stuffed peppers, but they don't like us. I'm always trying to come up with new recipes. I tend to get bored with the same ol' meals just recycled every few days or so.
